A contemporary Latin-American inspired restaurant in Washington's historic Colorado Building, Ceiba has been sizzling since it opened in 2003. The name "Ceiba" pays tribute to the imposing umbrella-shaped tree found throughout the new-world tropics, and the menu draws inspiration from the Yucatan (Vera Cruz and Cancun), Brazil (Sao Paulo and Rio de Janeiro), Peru, and Cuba.
